1 Cup Almond Butter
1 Large Egg
2 Tbsp Coconut Sugar
1/4 Cup Honey
1 1/2 Tbsp Ground Flaxseed
1 1/2 tsp Vanilla Extract
1 tsp Baking Soda
1/4 tsp Sea Salt
1/2 Cup Raw Chopped Pecans
1/2 Cup Dairy-free Dark Chocolate Chips (Lily's brand is recommended)
1. Preheat oven to 350 degrees. Line cookie sheet with parchment paper.
2. In a bowl, mix all of the ingredients except for the nuts and chocolate chips. Stir with a large spoon for 1 to 2 minutes. Then fold in the nuts and chocolate chips.
3. Drop the dough in rounded tablespoons onto the parchment paper. Bake for approx 10 minutes (or a few minutes longer for larger cookies).
4. Leave the cookies on the sheet until completely cool.
5. Keep in the refrigerator.
When at all possible, use organic ingredients. Also, use raw, local honey.
